I made this yummy cake for my honey...and got hooked myself! ;p
The simple recipe follows this week's menu, for those who are interested.
I'm also including a favorite bread machine recipe.

Best Yet Coconut Cake
Ingredients:
1 box French Vanilla cake mix
1 can coconut milk
1 can Betty Crocker whipped fluffy white frosting
1/2 bag Mounds flaked coconut
1/2 - 3/4 C confectioner's sugar (powdered sugar)
Prepare cake mix according to directions substituting the coconut milk for the water.
Bake in two 9" round pans according to directions.
Meanwhile, in small mixing bowl, mix together half bag of Mounds coconut, rest of coconut milk, 1/2 - 3/4 C powdered sugar. Cover until ready to frost cake.
After cake has cooled, spread 1/2 can frosting on bottom layer, top w/ 1/2 coconut sugar mix. Place second cake layer on top. Frost w/ remaining frosting and top w/ remaining coconut sugar mixture. For a cheerful bit of color, add two maraschino cherries to the top of the cake.

Quick sour bread
(Note: I believe this is referred to as quick because you don't have to make and wait for a starter to ferment.)
3/4 C sour cream
3/4 C milk
2 Tbs vinegar (I use malted)
2 tsp sugar
1 1/3 tsp salt
1/4 tsp baking soda
3 C bread flour
2 1/2 tsp bread machine yeast
Add ingredients according to bread machine directives (my machine calls for liquids first).
Settings: white or sweet, lightest crust, 2 lbs loaf
